Slice sweet potato in 1/2 inch slices and refrigerate extras for a later meal or snack.
Take two slices of sweet potato and toast in toaster or toaster oven until slightly browned and fork tender.
Spread ricotta on both slices and top with blackberries, granola and almonds. Drizzle with honey and serve immediately.
