Breakfast Bread


This hearty bread is a great start to anyone's morning!

Ingredients:

  • 3 eggs 
  • 2 tsp vanilla 
  • 1/4 cup honey or maple syrup 
  • 1/4 cup flour 
  • 1 cup wheat flour 
  • 1/2 tsp salt 
  • 1/2 tsp baking soda 
  • 2 cups North Bay Produce Dried Fruit - cherries, blueberries, cranberries, fits, dates, apricots, and/or raisins 
  • 2 cups nuts - walnuts, hazelnuts, pecans, almonds, pistachios, and/or pepitas 

Sharon's Hint

Make a few loaves of this bread at once, slice and freeze in zip bags. Pop in the toaster and have a hearty breakfast that is easy to eat on the run!


Directions

Step 1. 

Preheat oven 350F. Prepare a 9” loaf pan with non-stick spray and parchment paper, set aside.


Step 2. 

In a large mixing bowl, whisk together wet ingredients until blended.


Step 3. 

In a separate bowl, whisk dry ingredients, add in fruit and nuts and add to wet ingredients. If batter is stiff, add a little more buttermilk.  Turn into prepared pan and smooth top evenly. Bake for 45-50 minutes or until browned and toothpick comes out clean.  Best served toasted.


Step 4. 

Keep bread in refrigerator sliced and wrapped in plastic wrap. Bread can also be frozen.
