Blueberry Smoothie Bowl


This blueberry laden smoothie bowl is topped with shaved coconut and toasted walnuts…there is now a better way to start your day!

Ingredients

  • 1 cup blueberries (reserve a few for the topping) 1 cup Greek yogurt
  • 1/4 cup coconut milk
  • 1 tsp vanilla
  • 1 tsp sugar
  • 1 scoop protein powder (your choice)
  • couple of ice cubes
  • 1 TBLS chia seeds
  • 2 TBLS coconut shavings
  • 3 TBLS walnuts (toasted)
  • 1/4 tsp chia seeds (for topping)

Sharon's Hint

Try different nuts and use maple syrup, stevia or agave syrup for the sugar. Try with peanut butter powder for an added protein boost!


Directions

Step 1. 

Rinse blueberries and place in a blender along with yogurt, milk, sugar, vanilla, protein powder, ice cubes, and chia seeds. Blend until smooth.


Step 2. 

Pour in bowl and top with reserved blueberries, walnuts, coconut, and the 1/4 tsp chia seeds. 


Step 3. 

Serve immediately.
