Sweet Couscous with Dried Fruit

A great breakfast alternative to oatmeal!


Ingredients:

  • 2 1/3 cups water 
  • 1/2 cup honey
  • 1/3 cup North Bay Produce Dried Cherries
  • 1/3 cup North Bay Produce Dried Blueberries 
  • 2 1/2 cups couscous 
  • 1/2 cup chopped toasted almonds 
  • 1 tsp cinnamon 
  • 1/2 tsp ginger 
  • 1/2 tsp clove
  • Dash of salt 
  • Zest of one orange 

Directions

Step 1. 

Combine water, honey, and dried fruit in a medium sauce pan and bring to a boil, stirring constantly until honey is dissolved. 


Step 2. 

Once boiling, add spices, salt and couscous and stir until combined. Remove from heat and cover with tight fitting lid. Let sit until couscous has absorbed all liquid. 


Step 3. 

Toss in almonds and orange zest. Serve immediately or transfer to parchment lined baking sheet and let cool 10 minutes. Transfer to an airtight container and store in refrigerator.

Switch up the dried fruits and nuts in this colorful couscous. Try cranberries, dates or walnuts!
