Optional Strawberry Sauce:
Preheat oven to 375F. Grease sides and bottom of 9 inch spring form pan adding parchment paper to bottom.
In a large mixing bowl, beat eggs and sugar for 5 minutes until light in color and thick in texture.
Add yogurt, oil and vanilla and beat on low until combined.
In a separate bowl, add flour, baking powder and salt, whisking to combine. Add dry ingredients to we ingredients a third at a time making you do not overmix.
Pour half the batter in prepared pan and top with diced strawberries. Pour remaining batter over strawberries and top with remaining sliced strawberries making a pretty pattern on top. Press slightly into the batter and bake for 45-55 minutes or until a toothpick comes out clean.
Let cake rest in pan for 15-20 minutes and remove ring from pan.
To make strawberry sauce, add strawberries and sugar to a bowl. Mash with a potato masher or fork. Let sit or 1/2 hour or until sugar is dissolved and strawberries have released juices.
Served cooled cake with strawberry sauce or favorite ice cream.
