Pack peas into a mason jar.
Bring vinegar, water, salt, and minced garlic to a boil over high heat in a medium-size saucepan.
Sprinkle red pepper flakes and sliced garlic over peas and shake.
Pour hot brine over peas until completely covered and seal.
Let cool 15 min and refrigerate for at least 2 days before using. Peas will stay crisp for at least a week longer.
Add these crispy snow peas to sandwiches or in tuna salad for a tasty alternative to dill pickles!
