Morning Glory Muffins

A hearty muffin for breakfast or an after school snack!


Ingredients:

  • 1/2 cup old fashioned oats 
  • 3/4 cup flour 
  • 3/4 cup wheat flour 
  • 3/4 cup brown sugar 
  • 1/2 cup shredded coconut (non-sweetened)
  • 1 tsp ginger 
  • 2 tsp cinnamon 
  • 1/2 tsp salt
  • 1 North Bay Produce Apple, cored and grated with skin on 
  • 2 cups carrots, peeled and greated
  • 2 tsp baking soda
  • 3 eggs
  • 2/3 cups oil 
  • 2 tsp vanilla 
  • 2 TBS molasses 
  • 1/2 cup North Bay Produce Dried Cherries and/or Blueberries 
  • 1/2 cup sliced almonds 

Directions

Step 1. 

Preheat oven to 375F. Prepare 14 muffin cups with non-stick spray.


Step 2. 

.  In a large bowl, mix dry ingredients and sugar and whisk together. Add grated carrots and apples stirring to combine. 


Step 3. 

In a separate bowl, whisk wet ingredients and pour into dry mixing to combine.  Add in dried fruits and nuts and stir well.  Fill muffin cups ¾ way full and bake 18-20 minutes.


Step 4. 

Remove from oven and run knife around sides. Transfer to wire rack to cool.  Can be frozen.


Sharon's Hint

Instead of grated carrots, try grated drained zucchini. Try different fruit and nut combinations to change it up every time!
