Maple Cranberry Breakfast Bars

Homemade granola bars the entire family is sure to love!


Ingredients:

  • 3 cups Old Fashioned oats
  • 1 cup milk 
  • 1/2 cup dark brown sugar 
  • 1/4 cup maple syrup 
  • 1/4 coconut oil, melted 
  • 1 large egg
  • 1 cup dried cranberries
  • 1/2 cup ground flax seed
  • 1/2 cup pepitas 
  • 2 tsp cinnamon 
  • 2 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1 tsp salt 

Directions

Step 1. 

In a large bowl, combine all dry ingredients except brown sugar, mixing well. 


Step 2. 

In a separate bowl, combine wet ingredients along with brown sugar and whisk or use an immersion blender until oil is incorporated. Pour over dry mixture and blend. 


Step 3. 

Pour batter in a lightly greased parchment covered 8x8 pan, packing well. Bake at 350F for 40 minutes or until center is set and edges are brown. 


Step 4. 

Once baked through, let cool completely until cutting into bars with a serrated knife. Store in an airtight container. 


Sharon's Hint

Change out dried fruits or seeds to customize to your preferences. Try dried blueberries, sunflower seeds or slivered almonds.
