French Bean and Walnut Toasts

French Bean and Walnut Toasts

A no-cook appetizer for a crowd.


Ingredients:

  • ½ lb North Bay Produce French Green Beans (rinsed and trimmed if necessary) cut in ¼ inch pieces on bias
  • ½ lb North Bay Produce Yellow French Beans (rinsed and trimmed if necessary) cut in ¼ inch pieces on bias
  • 3 green onions (white and green portions, sliced in ¼ inch pieces)
  • ½ cup walnuts (chopped and toasted)
  • ½ cup feta cheese (crumbled)
  • Thin sliced whole wheat French baguette (toasted lightly)
  • 1 tsp dill
  • Juice of one lemon
  • 1 TBLS olive oil
  • Salt and pepper to taste

Directions

Step 1. 

In a medium sized bowl, add French beans and green onion tossing to mix. 


Step 2. 

Make dressing by adding lemon juice, olive oil, dill and salt and pepper. Whisk together and pour over French bean mixture.


Step 3. 

Toss to coat and refrigerate for 2 hours or overnight.


Step 4. 

When ready to serve, take toasted baguette and top with a small scoop of bean mixture using a slotted spoon. Sprinkle with feta cheese and walnuts. Serve immediately.

Not a dill fan? Try basil or thyme.
