Who doesn't love cookies for breakfast? Make a batch for the entire week for a quick and healthy breakfast.
Preheat over to 350F and line baking sheet with parchment paper.
In a medium sized mixing bowl, mash bananas with a fork. Stir in oats, vanilla and cinnamon.
Add dried cherries to the mixture and gently fold in.
Scoop dough into 1 inch balls and place evenly on baking sheet.
Bake for 12 - 15 minutes or until edge are golden brown. Serve immediately or store in an airtight container for up to 1 week.
