Toast just got that much better (if that's possible). Bourbon Apple Butter is a great breakfast addition.
Place all ingredients in an Instant Pot and cook on high pressure for 20 minutes.
Release pressure manually after timer, remove lid and switch to saute function.
Cook on saute stirring often so apple mixture does not stick to the bottom of the pot.
Once thickened to desired consistency, puree with an immersion blender (or stand up blender).
Pour finished apple butter in a pint jar and store in refrigerator up to a week.
*If using a stock pot, increase water to 1/2 cup and increase cook time to 30 minutes with lid off, stirring occasionally.
Makes a great gift! Place a ribbon around the rim and gift with warm bread or biscuits.
