Berry Mint Pizza with Goat Cheese

A light and refreshing pizza makes a great appetizer or pair with a big salad.


Ingredients:

Dough 

  • 1/2 cup self rising flour 
  • 1/2 cup plain Greek yogurt 

Toppings:

  • 1/2 cup mozzarella cheese 
  • 1 cup crumbled goat cheese 
  • 1/2 cup diced yellow pepper 
  • 1 cup blackberries 
  • 1 cup strawberries (hulled and quartered)
  • 1/4 cup toasted walnuts (optional)
  • Balsamic vinegar (I use blackberry)
  • Mint leaves

Directions

Step 1. 

For crust, combine flour and Greek yogurt together until dough forms. Turn out on floured surface and start kneading dough until a smooth ball forms (3 - 5 minutes). Cover and rest for 5 minutes. 


Step 2. 

Roll out dough into a circle and transfer to a greased pizza sheet or baking sheet. Bake in preheated 450 F oven for 5 minutes until dough is set and started to turn light brown. Remove from oven and top with goat cheese and mozzarella. Sprinkle yellow pepper and blackberries. Bake another 8 1- 10 minutes until crust is brown and cheese has melted. 


Step 3. 

Top with strawberries and mint leaves then drizzle with balsamic vinegar. Serve immediately.

Make dough in advance and refrigerate up to two days before use. Bring to room temperature before rolling out.
