Apple Oatmeal Cookies

The soft cookies make a great after school snack!


Ingredients:

  • 1/2 cup butter
  • 1/2 cup brown sugar 
  • 1/4 cup white sugar 
  • 1 egg
  • 2 tsp vanilla
  • 1 cup flour 
  • 1/4 tsp salt
  • 1/2 tsp baking powder 
  • 1 1/2 tsp cinnamon 
  • 1 3/4 cups old fashioned oats
  • 1 large North Bay Produce Honeycrisp apple, peeled and diced 
  • 1 1/2 cup North Bay Produce Dried Cranberries 

Directions

Step 1. 

Cream butter and sugar until fluffy. Add egg and vanilla and mix well. 


Step 2. 

In a separate bowl, whisk flour, salt, cinnamon and baking powder. Add flour mixture to butter mixture and combine. Fold in oatmeal, apple chunks and dried cherries. 


Step 3. 

Using a 2 TBS cookie scoop, drop cookies on prepared cookie sheets leaving about an inch between cookies. Bake at 350 F for 12-15 minutes until set and browned around the edges. Let cookies cool on sheets for 10 minutes before transferring to wire rack to cool completely. Makes around 18 cookies.
