A refreshing and healthy salad for warm summer days!
In a large bowl, add broccoli, slaw, apples, dried cherries and red onion tossing to combine.
To make dressing, add all ingredients together into a tightly lidded jar. Lid the jar and shake to combine ingredients until incorporated.
To assemble salad, pour dressing over broccoli mixture tossing well. Add sunflower seeds, cojita cheese and pepitas reserving a small amount of each for display.
Toss mixture together and spoon into a serving bowl. Top with reserved cheese, pepitas and sunflower seeds for presentation and serve.
This salad can be made a day ahead of time! Keep the salad (except apples) and dressing separate until serving then chop the apples, toss with salad then add the sunflower seeds, pepitas and cheese. Add dressing and serve.
